Green beans with pears

    ml
    dried pears, chopped
  • 100
    ml
    chicken stock
  • 1
    lemon rind
  • 500
    g
    green beans, topped and tailed
  • salt and freshly ground black pepper
  • 6
    rashers bacon
  • 30
    ml
    sugar
  • 10
    ml
    lemon juice
  • 25
    ml
    wine vinegar
 

Method

 
Mix the pears, chicken stock and lemon rind and boil for 5 minutes. Set aside. Stir-fry the green beans in a little oil or boil in water until just tender but still crisp. Remove to a side dish. Fry the bacon until done. Remove from the pan and chop finely. Add to the green beans along with the pears. Add the sugar, lemon juice and vinegar to the pan juices in which the bacon has been fried. Simmer for a few minutes and pour over the green beans. Serve with leg of pork.
