Green beans with feta and red onion

    green beans, trimmed and halved - just take the tops off, leave the spindly ends
  • 2
    red onions, thinly sliced - they make a difference, but spring or brown onions may also be used
  • 2 to 3
    discs feta cheese
  • 45
    olive oil
  • 15
    lemon juice
  • 1
    clove garlic, crushed
  • salt and milled pepper

Blanch beans in a pot of boiling water for 5 to 8 minutes, until just tender, but still crunchy.
Toss into a bowl with onions.
Crumble feta over mixture in bowl.
Mix lemon juice, olive oil and garlic together, pour over salad and toss to mix.
