Green bean and cucumber salad with peanut sauce

  • PEANUT SAUCE

    ml
    oil
  • 1
    clove garlic, crushed
  • 500
    g
    salted peanuts, finely crushed
  • 200
    ml
    coconut milk
  • 30
    ml
    soy sauce
  • 15
    ml
    brown sugar
  • lemon juice to taste
  • SALAD
  • 15
    ml
    olive oil
  • 500
    g
    green beans, topped and tailed
  • 125
    g
    baby sweetcorn
  • 1
    English cucmber, cut into strips
  • salt and freshly ground black pepper
 

Method

 
Heat the oil and saute the garlic until fragrant.
Add the remaining ingredients, except the lemon juice, and simmer slowly for five minutes.
Remove from the heat and season to taste with a dash of lemon juice.
Heat a large pan and add the oil, saute the beans and sweetcorn for two to three minutes and remove from the heat.
Cool and add the cucumber.
Pour the sauce over and season with salt and freshly ground black pepper.
