Greek-style pasta

    pasta ruce (risoni)
  • 50
    ml
    olive oil
  • 200
    g
    fresh asparagus, cut into 2 cm pieces
  • 1
    bunch spring onions, sliced
  • 12
    marinated sun-dried tomatoes
  • 12
    black olives, halved
  • 45
    ml
    origanum or thyme, freshly chopped
  • 200
    g
    feta cheese
 

Method

Cook the pasta according to the pack instructions.
Drain, stir in half the oil and set aside.
Heat remaining oil in a large saucepan, add the asparagus and spring onions and stir-fry for about five minutes.
Remove from the heat and stir into the hot, drained pasta.
Stir in the tomatoes, olives and herbs, and season to taste with salt and freshly ground black pepper.
Serve hot or cold, sprinkled with feta cheese.
