Ingredients (11)

400.00 g feta cheese
250.00 ml black olives
3.00 garlic — cloves, chopped
5.00 ml peppercorns — black, cracked
2.00 ml dried red chilli flakes — red
3.00 ml coriander — seeds, toasted, crushed
1.00 bay leaves — torn
45.00 ml capers
10.00 ml fresh thyme — chopped
1.00 lemon — zest only
250.00 ml olive oil

Method:

Cut the feta into large chunks and put in a shallow glass bowl with the olives.
Mix the remaining ingredients in a screw-top jar and shake well.
Pour the mixture over the cheese and olives and mix gently with your hands.
Leave to stand for 2 days to allow the flavours to develop.
