Ingredients

  • 400
    g
    feta cheese
  • 250
    ml
    black olives
  • 3
    garlic cloves, chopped
  • 5
    ml
    crushed whole black peppercorns
  • 2
    ml
    red chilli flakes
  • 3
    ml
    toasted and crushed coriander seeds
  • 1
    fresh bay leaf, torn
  • 45
    ml
    capers
  • 10
    ml
    roughly chopped fresh thyme
  • 1
    grated rind of lemon
  • 250
    ml
    olive oil, slightly heated
 

Method

Cut the feta into large chunks and put in a shallow glass bowl with the olives.
Mix the remaining ingredients in a screw-top jar and shake well.
Pour the mixture over the cheese and olives and mix gently with your hands.
Leave to stand for 2 days to allow the flavours to develop.
