    head lettuce, washed and leaves separated
  • 1
    English cucumber, thinly sliced
  • 2
    tomatoes, thinly sliced
  • 1
    onion, sliced
  • 250
    g
    feta cheese, diced
  • 10
    black olives
  • 5
    green olives
  • SALAD DRESSING
  • 30
    ml
    wine vinegar
  • 5
    ml
    French mustard
  • salt
  • pepper
  • 1
    onion, finely chopped
  • 100
    ml
    salad oil
 

Method

 
Arrange the lettuce leaves on a salad platter and arrange the cucumber, tomatoes and onion on top. Sprinkle the cheese and olives on top. Blend the vinegar, mustard and salt and pepper to taste in a mixing bowl. Add the onion. Slowly add the oil and beat until the mixture thickens slightly. Pour over the salad just before serving and then serve immediately. Serves 6.
