Greek mushrooms

Wipe the mushrooms with a damp cloth (only necessary if they have any bits of soil on them) and trim the stalk ends. Heat the sunflower and olive oil and sauté the mushrooms, along with the onion rings and seasonings, till the mushrooms are thoroughly coated with the oil mixture. Add the white wine and heat for 5 minutes. Season with lemon juice and salt to taste. Pour into a sterilised glass jar and leave to cool. Serve on cocktail sticks as a snack with drinks or as a starter for a braai. Serve the mushrooms in pretty bowls accompanied by crusty bread for mopping up the sauce. Alternatively, wrap the mushrooms in slices of pepper salami secured with cocktail sticks. Serves 4-6.
