Greek lamb pizza

  • MARINATED LAMB

    lamb, cut into strips

    warm water

    each basil, thyme, oregano, garlic salt, onion salt and chervil
  • TO ASSEMBLE
  • olive oil for frying

    onion, thinly sliced

    mushrooms, sliced
  • 150

    sun-dried tomatoes in vinaigrette, chopped
  • 100

    calamata olives, pitted
  • 375
    ml
    grated mozzarella cheese
  • 375
    ml
    crumbled feta cheese
 

Method

 
Marinated lamb
Place the meat strips in a glass dish.
Mix the remaining ingredients, pour over the meat and mix well.
Cover and marinate for 2 hours.
Base
Meanwhile, pour the warm water into a mixing bowl, sprinkle the instant yeast on top and leave to stand for 5 minutes.
Add half the flour (500 ml), along with the pepper and seasoning.
Stir to form a smooth batter.
Add another 250 ml of the flour.
Stir until the mixture forms a ball.
Add more flour to make a smooth dough (it mustn't be sticky).
Knead the dough for about 5 minutes or until elastic, cover and leave to rise in a warm place until double in volume.
Knock down, divide the dough in half and roll each half into a 28 cm circle.
Leave for 15 minutes to rise again.
To assemble
Drain the meat strips and fry them rapidly in a little olive oil until just done.
Remove from the pan and leave to cool.
Preheat the oven to 220 °C and grease two ovenproof pizza pans or baking sheets with oil.
Place the dough circles on top and, working from the centre of the circle outwards, press the dough so it covers the entire pan or baking sheet.
Arrange the meat on top, followed by the onion, mushrooms, sun-dried tomatoes, olives and cheese.
Bake for 15 to 20 minutes or until the dough is done and the cheese is melted.
