Greek chicken salad

  • SALAD
  • 800
    g
    chicken breast fillets or other finely sliced chicken meat
  • 1
    cucumber, sliced
  • 250
    ml
    feta cheese, broken into pieces
  • 125
    ml
    black olives
  • salt and freshly ground black pepper
  • SALAD DRESSING
  • 250
    ml
    mayonnaise
  • 125
    ml
    plain yoghurt
  • 5
    ml
    origanum
  • freshly chopped parsley
  • lettuce leaves
  • 6
    pita breads, cut open halfway
 

Method

 
Fry the chicken in a little oil until brown on the outside and done. Drain on paper towelling and cool. In a bowl, mix the finely sliced chicken with the cucumber, feta and olives. Season with salt and pepper to taste. Blend the mayonnaise and yoghurt and season with origanum and parsley. Pour over the ingredients in the mixing bowl and mix lightly. Arrange a few lettuce leaves in each pita bread and fill with a little of the chicken mixture. Serve immediately. Serves 4-6.
