Greek bean and olive salad

    butter beans in tomato, drained

    tomatoes, cut into wedges

    small red onion, sliced into rings
  • 200

    black olives, drained
  • 30
    ml
    freshly chopped green or red basil
  • SALAD DRESSING
  • 1
    clove garlic, crushed
  • 45
    ml
    lemon juice
  • 30
    ml
    olive oil
  • 15
    ml
    balsamic vinegar
  • salt and freshly ground black pepper to taste
 

Method

 
Gently mix all the salad ingredients. Blend the ingredients for the salad dressing and pour over the salad. Leave for a few hours before serving. Serves 4.
