Gran’s rich, creamy lemon curd

Ingredients (5)

125.00 ml butter
1.00 lemon — zest only
250.00 ml sugar
2.00 lemons — juice only
2.00 eggs

Method:

Place the butter and zest in the top of a double boiler.

Stir in the sugar and lemon juice, and heat gently until the sugar has dissolved. Remove top section of the boiler.

Beat the eggs in a bowl, gradually whisk in the butter mixture and place back into the top of the double boiler. Stir over moderate heat until the mixture thickens to a cream.

Pour into a hot sterilised jar, and leave to cool before eating. Keep chilled in the fridge and eat within a week.
