Ingredients (6)

600.00 g sugar
1.00 Litres water — boiled
1.00 Litres water — cold
4.00 lemon — zest and juice
15.00 ml Cream of tartar
10.00 g active dried yeast

Method:

Add the sugar to the boiling water and stir until the sugar has dissolved completely. Add the cold water, lemon rind and juice, cream of tartar, and yeast. Mix well. Pour into a clean bottle and stand for 3 hours at room temperature before chilling in the fridge. Serve with ice.
Makes about 2 litres.
