Preheat the oven to 180°C and spray nine hollows of two giant muffin pans with non-stick spray. Place a ring of pineapple at the bottom of each hollow, then chop the cherries and divide them between the hollows. Prepare the cake batter according to the directions and fill each hollow. Bake for 20 minutes then allow to cool slightly.
