Granadilla squares

    butter

    icing sugar

    cake flour
  • 15
    ml
    ice-cold water to bind, if necessary

    castor sugar
  • 9
    jumbo eggs, beaten
  • 125
    ml
    lemon juice
  • 170
    ml
    fresh granadilla pulp
  • icing sugar for dusting
 

Method

 
Preheat oven to 180 ºC. Cream butter, icing sugar and 120 g flour and water to bind, if necessary. Press into an ungreased 20 cm square baking pan. Bake for 15 minutes, or until golden. Cool completely. Beat sugar and eggs for about 10 minutes at high speed, or until pale yellow and thickened. Beat in lemon juice and granadilla pulp, then fold or beat in remaining flour and pour over base. Bake for 45 to 50 minutes, or until just firm to the touch. Cool completely. Dust with icing sugar. Cut into squares and serve.
