Granadilla cream cheese mousse

  • 4
    fresh granadillas, halved
  • 125
    fresh cream
  • castor sugar to taste
  • 2
    vanilla essence
  • 250
    creamed cottage cheese
  • few drops lemon juice
  • mint leaves for decoration


Carefully remove the granadilla pulp from the shells and set aside. Whip the cream until stiff. Fold in castor sugar to taste and the vanilla essence. Spoon the cottage cheese into a mixing bowl and add the cream, pulp and lemon juice. Mix gently and chill until just before serving. Spoon the mixture into the empty shells. Decorate with fresh mint leaves and serve.
