Grain salad

Ingredients

    x 250 ml cooked brown rice (tip: cook in light vegetable stock for added flavour)
  • 1
    large yellow or red pepper, finely chopped
  • 3
    stalks celery, diced
  • 3
    large carrots, peeled into ribbons
  • 4
    courgettes, grated
  • 60
    ml
    Italian parsley, chopped
  • DRESSING
  • 1
    fat clove garlic
  • 60
    ml
    olive oil
  • 30
    ml
    Verjuice or white balsamic vinegar
  • 30
    ml
    freshly squeezed lemon juice
  • 30
    ml
    water
  • salt and milled pepper
 

Method

20 minutes
 
Mix rice and vegetables together.
Toss to combine.
Whisk dressing ingredients together and pour over salad.
