Ingredients (10)

4 kg gammon
2 carrots — chopped
1 onion — roughly chopped
8 black peppercorns
24 cloves
Glaze
3 Tbs seville orange marmalade
1/2 c brown sugar
3 Tbs english mustard — hot
1/2 c orange juice
2 tsp garlic and ginger paste

Method:

Preheat oven to 180°C.

Place gammon in a pot with enough water to cover. Add carrots, onion and peppercorns and simmer for 30 minutes for every 500g.

Remove gammon from liquid and allow to cool slightly. Remove rind/skin with a sharp knife, then score fat in a diamond pattern and stud with cloves.

Mix glaze ingredients together, then smooth evenly over cooked gammon.

Roast for 45 minutes, basting frequently to ensure an even coating. Remove from oven once gammon is golden brown and heated through.

Rest for 15 minutes before serving.
