Gooseberry and swiss-roll fool

    mini swiss rolls, sliced
  • 125
    ml
    double-thick cream
  • 125
    ml
    Greek yoghurt
  • 250
    g
    gooseberries
  • 15
    ml
    castor sugar
 

Method

1. Place the mini swiss-roll slices in individual serving bowls along with a few fresh gooseberries.
2. Mix the double-thick cream, Greek yoghurt and the castor sugar in a small mixing bowl.
3. Spoon a few dollops of the yoghurt mixture into each serving bowl.
4. Top each portion with more slices of swiss roll and decorate with a few more fresh gooseberries.
