Gooey meringues

    large egg whites
  • 660
    g
    castor sugar
  • 7
    ml
    red food colouring
 

Method

 
Preheat oven to 150 ºC. Place egg whites in a large bowl (if you're using a hand-held electric whisk) or the bowl of your food processor. Whisk on low for 2 minutes, or until whites are foamy. Whisk on medium for 1 minute, then on high until whites form stiff peaks. Whisk in sugar, a little at a time, on high speed. Add colouring and whisk until mixture is stiff and glossy. Drop 8 large or 16 small spoonfuls of mixture onto a greased baking sheet. Using the back of a spoon, lift mixture to make peaks. Place in oven and reduce heat to 140 ºC. Bake for 30 minutes. Turn oven off and leave meringues to dry out for at least 4 hours, or overnight. Dust with icing sugar and store in an airtight plastic container.
