Golden glow ring cake

    grated orange rind

    egg white

    unsweetened chocolate, melted

    vanilla essence
 

Method

 
Preheat oven to 190 ºC. Grease and line a large ring tin. 1. Sift flour, baking powder and salt into a mixing bowl. Cream margarine and sugar until light and fluffy. 2. Blend in orange rind. Add egg yolks and beat in well. Add sifted dry ingredients to creamed mixture, alternately with milk. Beat well for 1 minute. 3. Beat egg white until stiff but not dry and fold into mixture, using a spatula. 4. Divide batter into 2 parts. Add melted chocolate and vanilla essence to one part. Put tablespoonfuls of batter, alternating light and dark, into prepared cake tin. 5. Bake for 30 to 35 minutes. Cool in tin for 5 minutes. Turn out onto a wire rack to cool. When cool, ice top with orange chocolate icing or drizzle with melted chocolate.
