Golden foamy honeycomb

Ingredients

  • 190
    ml
    (½ cup) sugar
  • 500
    ml
    (2 cups) honey
  • 75
    ml
    (5 tbsp) butter
  • 5
    ml
    (1 tsp) bicarbonate of soda
 

Method

Heat the sugar, honey and butter over a low heat. Simmer for 7 minutes or until the mixture turns a caramel colour. Remove from the heat and stir in the bicarb until pale and foamy. Pour into a small greased dish. Leave to set. Break into pieces.
