Golden-crusted onion soup

    butter

    onions, peeled and sliced
  • 10

    fresh lemon thyme
  • 500
    ml
    dry white wine
  • sea salt and milled black pepper to taste

    Litres
    homemade chicken stock
  • 12
    medium-thick baguette slices
  • 125
    g
    Gruyère cheese, grated
 

Method

 
Heat butter in a saucepan over moderate heat and gently sauté onions and lemon thyme until lightly golden. Slowly add wine. Season, then braise, uncovered, until onions have softened but not browned. Meanwhile, simmer stock in a separate saucepan until piping hot. Divide onions equally among soup bowls, spoon stock over and top each serving with baguette slices sprinkled with cheese. Place under a hot grill until cheese melts and bread crisps. Serve immediately.
