Goat's milk cheese, herb and petal salad

    ml
    each chopped fresh parsley and chives
  • 45
    ml
    pink carnation petals
  • 200
    g
    goat's milk cheese, cut into rounds
  • 3
    tortillas
  • sunflower oil for frying
  • 100
    g
    lettuce leaves
  • 30
    ml
    olive oil
  • 45
    ml
    raspberry vinegar
 

Method

 
Mix parsley, chives and carnation petals. Pat mixture into cheese rounds and chill until firm. Cut tortillas into long strips, 2 to 3 cm wide. Heat sunflower oil in a pan and fry tortilla strips until golden brown. Drain on kitchen paper. Place tortilla strips on a platter. Add lettuce and cheese, drizzle with olive oil and vinegar and serve.
