Gnocchi with chicken curry

    oil

    onion, chopped

    green curry paste
  • 1
    x 400 ml can coconut milk
  • 4
    chicken breasts cut into large pieces
  • 100
    g
    green beans, halved
  • 6
    curry leaves
  • 15
    ml
    fish sauce
  • 15
    ml
    lime juice
  • 5
    ml
    grated lime rind
  • 10
    ml
    soft brown sugar
  • 400
    g
    gnocchi pasta
  • fresh coriander
 

Method

 
Heat the oil in a heavy-based saucepan.
Add the onion and curry paste and stir-fry for one minute.
Add the coconut milk and bring to the boil.
Add the chicken pieces, beans and curry leaves and simmer, uncovered, for 15 to 20 minutes or until the chicken is tender.
Stir in the fish sauce, lime juice and rind and the brown sugar, keeping the curry warm until needed.
Cook the pasta in salted boiling water until al dente.
Transfer to a serving platter, spoon the chicken curry on top and garnish with coriander.
