Glazed whisky apples with chilled ricotta cheese

Ingredients (10)

30.00 ml butter
4.00 apples — green or yellow, peeled, cored, sliced
30.00 ml sugar
1.00 large orange — finely grated peel
1.00 cinnamon — stick
200.00 ml orange juice
60.00 ml whiskey
60.00 ml cream — thick
15.00 ml honey
ricotta cheese — chilled

Method:

Heat butter in a frying pan until golden, add apples and sauté for 1 to 2 minutes. Sprinkle with sugar, add orange peel and cinnamon stick and stir in orange juice and whisky.
Cover with waxed paper and simmer gently until apples have softened. Remove paper, increase heat and cook briskly to reduce sauce.
Lightly blend cream with honey.
Serve apples in piping hot plates with chilled ricotta covered with cream and honey mixture.
