Glazed whisky apples with chilled ricotta cheese

    green or yellow apples, peeled, cored and sliced

    large orange, finely grated peel

    thick cold cream
  • 15
    ml
    honey
  • chilled ricotta cheese
 

Method

 
Heat butter in a frying pan until golden, add apples and sauté for 1 to 2 minutes. Sprinkle with sugar, add orange peel and cinnamon stick and stir in orange juice and whisky. Cover with waxed paper and simmer gently until apples have softened. Remove paper, increase heat and cook briskly to reduce sauce. Lightly blend cream with honey. Serve apples in piping hot plates with chilled ricotta covered with cream and honey mixture. TOTAL KILOJOULE COUNT: 7 240 kJ (1 730 Cal). A portion: 1 810 kJ (435 Cal).
