Ingredients (10)

6.00 golden delicious apples — large
5.00 ml butter — for greasing
3.00 orange — juice only
1.00 vanilla — pod
4.00 cinnamon — stick
2.00 cloves
3.00 granadillas — pulp
45.00 g sugar
45.00 ml butter — cubed
45.00 ml jam — smooth, apricot

Method:

1. Core and peel apples. Arrange them in rows in a greased ovenproof dish (use butter for greasing).
2. Strain orange juice through a fine-mesh strainer. Slit vanilla pod and scrape out pulp, using a sharp knife. Stir into orange juice and pour over apples.
3. Tuck cinnamon sticks and cloves in between apples and spoon fresh granadilla pulp (or use a 115 g can) over. Sprinkle tops of apples with sugar and add butter cubes to enrich sauce. Cover tightly with foil.
4. Bake at 180 ºC for about 30 minutes, or until apples are just softened (take care they don’t crack). Preheat grill.
5. To make glaze, heat apricot jam, adding a little of the hot juices from the apples. When runny, spoon over each apple, coating it well.
6. Grill until tops blister (take care not to burn). Remove and baste with pan juices until shiny. Serve the baked apples at room temperature.
