Gingered rice with stir-fried beef

    short-grain rice
  • 10

    piece fresh ginger, cut into matchsticks
  • 30
    ml
    oil
  • 500
    g
    beef fillet, thinly sliced
  • 60
    ml
    hoisin, oyster or plum sauce
  • 12
    spring onions
  • 2
    sheets nori, cut in half
 

Method

 
Prepare the rice according to packet instructions, adding half the ginger. Heat half the oil in a frying pan. Add the beef fillet and stir-fry for 3 minutes. Add the sauce and keep warm. Heat the remaining oil in a small pan and stir-fry the spring onions and remaining ginger until golden brown. Spoon the rice on to sheets of nori. Top with beef and stir-fried spring onions.
