Gingered pork and green bean stir-fry

    pork fillet or pork schnitzel

    ginger, minced

    soy sauce

    brown sugar or palm sugar
  • 15

    fish sauce
  • 1
    lime, juice
  • 5

    chilli flakes

    canola or peanut oil
  • 2
    onions
  • 200
    g
    fine green beans
  • handful basil leaves, roughly torn
  • rice or noodles to serve
 

Method

 
Flatten and cut pork into strips and lay in a dish. Combine the first 9 ingredients, pour over pork strips and marinate for 2 hours. Heat 15 ml (1 tbsp) oil in a wok or non-stick pan with high sides, stir-fry onion and fine green beans for 3 to 5 minutes, until onions are soft and beans are bright green and nearly soft. Scoop out marinating pork strips and add to wok. Stir-fry for 2 minutes, then add reserved marinade and cook for a further 3 minutes. Stir in basil leaves and serve immediately with rice or noodles.
