Gingered peach crumble

    peaches or nectarines
  • 65

    orange juice
  • 45
    ml
    brandy (optional)
  • mint leaves (optional)
  • TOPPING
  • 100
    g
    tennis biscuits, crumbled
  • 100
    g
    ginger biscuits, crumbled
  • 1
    ml
    ground cinnamon
  • 2
    ml
    ginger
  • 1
    lemon, grated peel
  • 65
    ml
    melted butter
 

Method

 
TOPPING: Mix ingredients together and set aside. Halve and stone fruit. Place, cut side up, in an oven-to-table baking dish. Mix juice and brandy and pour over fruit. Spoon crumble topping over fruit. Bake in a preheated 200 ºC oven for 20 minutes, or until topping is lightly browned (peaches should remain quite firm). Grill to crisp crumble, if necessary. Decorate with mint leaves and serve with thick cream and/or natural yoghurt.
