Ingredients (10)

4.00 peaches — or nectarines
65.00 ml orange juice
45.00 ml brandy — optional
fresh mint — optional
TOPPING
100.00 g tennis biscuits — crumbled
100.00 g ginger biscuits — crumbled
1.00 ml cinnamon — ground
2.00 ml fresh ginger
1.00 lemon — zest only
65.00 ml butter — melted

Method:

TOPPING: Mix ingredients together and set aside.
Halve and stone fruit. Place, cut side up, in an oven-to-table baking dish. Mix juice and brandy and pour over fruit. Spoon crumble topping over fruit.
Bake in a preheated 200 ºC oven for 20 minutes, or until topping is lightly browned (peaches should remain quite firm).
Grill to crisp crumble, if necessary.
Decorate with mint leaves and serve with thick cream and/or natural yoghurt.
