Ingredients (10)

500.00 ml flour — cake
5.00 ml Baking powder
10.00 ml ginger — ground
2.00 ml salt
3.00 ml Bicarbonate of soda
125.00 ml brown sugar
190.00 ml golden syrup
65.00 g margarine
2.00 eggs
190.00 ml milk

Method:

Preheat oven to 160 °C. Grease a 23 cm loaf pan
Sift dry ingredients together and add brown sugar
Melt syrup and margarine together – do not boil.
Whisk eggs and milk together. Gradually stir syrup mixture into egg mixture.
Make a well in the centre of the dry ingredients and stir in liquid. Beat well until smooth.
Pour into loaf pan and bake for 1 1/4 hours.
