Ingredients (11)

500.00 ml flour — cake
100.00 ml castor sugar
10.00 ml ginger — ground
10.00 ml cinnamon — ground
5.00 ml Baking powder
2.00 ml salt
2.00 eggs — extra-large, lightly whisked
250.00 ml oil
250.00 ml golden syrup
10.00 ml Bicarbonate of soda
250.00 ml tea — cold, black

Method:

Preheat the oven to 190 °C and grease a small ring cake tin (not loose-bottomed) with butter or non-stick spray.

Sift the flour, castor sugar, ginger, cinnamon, baking powder and salt together.

Dissolve the bicarbonate of soda in the tea and add to the egg mixture.

Add the dry ingredients, mix well and turn into the prepared tin.

Bake for 1 hour or until done and a testing skewer comes out clean.

Makes a medium-sized cake.
