  • CRUST
  • 200
    g
    ginger biscuits, crushed
  • 110
    g
    butter or margarine, melted
  • FILLING
  • 45
    ml
    custard powder
  • 375
    ml
    boiling water
  • 25
    ml
    golden syrup
  • 15
    ml
    sugar
  • 125
    ml
    ginger preserve, finely chopped
  • extra pieces of ginger
  • whipped cream for decoration
 

Method

 
Combine the crushed ginger biscuits and butter or margarine and line a 23 cm pie dish with the mixture. Chill until needed. Blend the custard powder with a little water. Stir the boiling water, golden syrup and sugar together until the sugar and syrup have dissolved and add the custard powder. Heat until the mixture comes to the boil and thickens. Add the ginger pieces and mix. Cool slightly and pour into the prepared crust. Chill until the filling is completely cold. Decorate with ginger pieces and whipped cream. Makes a medium tart.
