Ingredients (9)

CRUST
200.00 g ginger biscuits — crushed
110.00 g butter — or margarine, melted
FILLING
45.00 ml custard powder
375.00 ml water — boiled
25.00 ml golden syrup
15.00 ml sugar
125.00 ml ginger — preserve, finely chopped
fresh ginger
cream — whipped, to doecorate

Method:

Combine the crushed ginger biscuits and butter or margarine and line a 23 cm pie dish with the mixture. Chill until needed. Blend the custard powder with a little water. Stir the boiling water, golden syrup and sugar together until the sugar and syrup have dissolved and add the custard powder. Heat until the mixture comes to the boil and thickens. Add the ginger pieces and mix. Cool slightly and pour into the prepared crust. Chill until the filling is completely cold. Decorate with ginger pieces and whipped cream.
Makes a medium tart.
