Ginger nuts

    butter
  • 500
    g
    cake flour
  • 15
    ml
    bicarbonate of soda
  • 30
    ml
    milk
  • 100
    g
    sugar
  • 20
    ml
    ground ginger
  • 1
    large egg
  • 500
    g
    honey
  • crystallised ginger, to decorate
 

Method

15 minutes
 
Preheat oven to 180 ºC. Rub the butter into the flour. Mix the bicarb and milk together. Add all remaining ingredients, making a dough with the honey. Allow to stand overnight. Knead thoroughly next morning. Shape into round balls like large marbles. Place on a greased baking tray. Make a dent in the middle of each one and place a piece of ginger into each dent. Bake in preheated oven for 10 to 15 minutes.
