Ginger-glazed chicken

Ingredients

  • 15
    ml
    freshly grated ginger OR
  • 5
    ml
    dried ginger
  • 45
    ml
    olive oil
  • 60
    ml
    honey
  • 100
    ml
    balsamic vinegar
  • 2
    cloves garlic, crushed
  • 15
    ml
    lemon juice
  • 6
    chicken breast fillets, thinly sliced
  • 5
    ml
    grated lemon zest
 

Method

10 minutes
 
Mix all the ingredients except the chicken and lemon zest.
Add the chicken and stir to coat well.
Marinate for 15 minutes or until ready to cook.
Heat a large frying pan over a medium to high heat and fry the chicken in batches until golden and cooked through.
Serve with jasmine rice or noodles, sprinkled with lemon zest.

VARIATION
Make ginger-glazed chicken pockets.
Heat four flour tortillas and fold them to form pockets.
Fill with the ginger-glazed chicken, shredded lettuce, diced tomatoes and Greek yoghurt.
