Ingredients (10)

180.00 g butter
180.00 ml honey
5.00 ml vanilla — essence
5.00 ml Bicarbonate of soda
500.00 ml sorghum flour
100.00 ml cornflour
10.00 ml fresh ginger
5.00 ml cinnamon — ground
2.00 ml nutmeg — ground
0.00 salt — pinch

Method:

Preheat oven to 180 &degC.
Grease two baking sheets and line them with baking paper.
Cream the butter and honey until light and fluffy.
Add the vanilla essence and bicarbonate of soda and beat.
Sift the flour, spices and salt together.
Add to the butter mixture, mixing to form a dough.
Knead lightly until smooth.
Wrap in clingfilm and chill for an hour.
Roll the dough into balls and arrange on a baking sheet, leaving room in between for the dough to spread.
Flatten the balls slightly with a fork.
Bake for about 12 to 15 minutes or until the cookies are golden brown.
Leave to cool on the baking sheet before placing on a wire rack to cool completely.
Makes about 48 cookies.
