800.00 ml flour — cake
125.00 ml cocoa powder
15.00 ml Baking powder
5.00 ml Bicarbonate of soda
5.00 ml salt
100.00 g ginger — preserve in syrup
100.00 g walnuts — halved
280.00 ml brown sugar — soft
175.00 g butter
350.00 g golden syrup
200.00 g dark chocolate — broken into pieces
1.00 eggs — extra-large
300.00 ml milk

Method:

Preheat the oven to 170 ºC and butter a deep 27 cm diameter cake tin, or spray with non-stick spray. Line the tin with baking paper. Place the cake flour, cocoa powder, baking powder, bicarbonate of soda, salt, ginger and walnuts in a mixing bowl and mix well. Place the sugar, butter, syrup and chocolate in a saucepan and heat slowly until the chocolate has melted. Pour the chocolate mixture over the dry ingredients, add the egg and milk and blend well. Turn the batter into the prepared cake tin and bake for about one hour until firm. Cool the cake (it will be slightly hollow in the centre) and dust with icing sugar just before serving.
Makes 1 large cake.
