    cake flour
  • 10
    ml
    ground ginger
  • 5
    ml
    ground mixed spice
  • 120
    g
    sugar
  • 2
    ml
    bicarbonate of soda
  • 100
    ml
    golden syrup
  • 150
    g
    butter
 

Method

 
Mix all the dry ingredients together in a bowl. Heat the butter and syrup until melted. Add to the dry ingredients and mix. Knead until the dough is smooth. Roll small balls and place on greased baking trays. Press flat with a fork. Bake in a preheated 170 ºC oven for 20 to 25 minutes until firm. Cool on wire racks.
