Ingredients (11)

300.00 g noodles — rice
30.00 ml oil
2.00 garlic — cloves, crushed
1.00 fresh ginger — grated
500.00 g pork mince
30.00 ml soy sauce
1.00 red chilli — deseeded and chopped
4.00 tomatoes — deseeded and cut into wedges
4.00 spring onions — sliced
8.00 baby corn — halved
45.00 ml fresh coriander — chopped

Method:

Cook the rice noodles in boiling water.
Drain and keep warm.
Heat a wok or heavy pan and swirl the oil round it.
Add the garlic and ginger and cook for 30 seconds.

Add half the mince, stir-frying and breaking up any lumps.
Add the remainder of the meat and cook until evenly browned, about 5 minutes.

Stir in the soy sauce, chilli, tomatoes, spring onions and mealies.
Cook for about 2 minutes.

Toss in coriander leaves and freshly ground black pepper, to taste.
Spoon pork over the noodles and serve immediately.
