Ginger agar-agar with chilled litchis

    agar-agar powder
  • 125
    ml
    cold water
  • 1
    Litres
    boiling water
  • 150
    g
    sugar
  • 15
    g
    stem ginger, grated
  • 420
    g
    litchis, drained and chilled
 

Method

 
Dissolve agar-agar in cold water. Add boiling water, sugar and grated ginger. Simmer together for 15 minutes, then strain off the liquid and cool. Pour into a shallow baking sheet, then cover the mixture and refrigerate until set. Turn out jelly and cut into cubes. Serve with chilled litchis.
