Ingredients (6)

30.00 g agar-agar
125.00 ml water — cold
1.00 water — boiled
150.00 g sugar
15.00 g ginger — stem, in syrup, grated
420.00 g litchis — tinned

Method:

Dissolve agar-agar in cold water. Add boiling water, sugar and grated ginger. Simmer together for 15 minutes, then strain off the liquid and cool.
Pour into a shallow baking sheet, then cover the mixture and refrigerate until set. Turn out jelly and cut into cubes.
Serve with chilled litchis.
