Ingredients (8)

50.00 ml gin
30.00 ml lemon juice
20.00 ml sugar syrup
0.00 water — or soda water
0.00 lime — or lemon peel
0.00 sugar — syrup
100.00 ml water
100.00 g sugar

Method:

Mix together the gin, lemon juice and syrup (see below), preferably in a cocktail shaker.
Pour into a tall glass and top up with the mineral water.
Garnish with thin spirals of lime or lemon peel.
To make the sugar syrup, mix the water with the sugar and bring to the boil.
Remove from the heat and leave to cool.
(This makes enough for 5 to 6 servings of gin fizz. The syrup keeps virtually indefinitely in the fridge in a closed bottle.)
