Giant breakfast scones

    extra-large egg, whisked

    lemon juice
  • 500
    ml
    cake flour

    baking powder

    ml
    sugar

Method

Preheat the oven to 190 ºC and butter the hollows of a muffin tin or spray with nonstick spray. Blend the oil and egg and add enough milk to make up 250 ml (1 c) liquid. Add the lemon juice. Sift the dry ingredients together and make a well in the centre. Add the milk mixture and mix lightly with a spatula until just blended. Spoon the batter into the hollows of the muffin tin and bake for about 15-20 minutes or until done and nicely risen. Makes 9 scones.
