Giant bacon and cheese muffins

    cake flour

    baking powder
  • salt

    bacon, finely sliced
  • 500
    g
    grated Cheddar cheese
  • handful fresh parsley, chopped
  • 3
    jumbo eggs
  • 250
    g
    margarine, melted
  • 500
    ml
    milk
 

Method

30-35 mins
 
Preheat the oven to 200 ºC. Grease the hollows of a deep muffin tin with margarine or spray with nonstick spray. Sift the cake flour, baking powder and salt together. Add the bacon, cheese and parsley and mix well. Beat the eggs, and add the margarine and milk. Add to the dry ingredients and stir lightly until just mixed. Fill the muffin tin hollows with the batter and bake for about 30-35 minutes, depending on the size of the muffins. Loosen the muffins slightly and leave to cool in the tin. Remove from the tin and serve lukewarm or cold with extra cheese and preserves. Makes 8 giant or 20 medium-sized muffins.
