Gemsbok marrowbone pot

    gemsbok marrowbones
  • 1

    game chops
  • 1
    large onion, sliced
  • few sprigs fresh rosemary and a few blades of garlic chives
  • 340
    ml
    beer
  • 12
    juice of a lemon
  • 125
    ml
    sherry
  • salt and pepper to taste
  • 500
    g
    prunes or mixed dried fruit, soaked
 

Method

 
Brown the marrowbones and meat in a large black pot. Add the onion and sauté until soft. Sprinkle with rosemary and garlic chives. Add the beer, lemon juice and sherry, cover and simmer until the meat is tender. Season with salt and pepper. Add the prunes or dried fruit and simmer until the fruit is soft. Check seasoning. Serve with onion pie, bottled quinces, homemade bread and konfyt. Serves 6.
