    schmaltz (chicken fat)
  • 3
    onions, chopped
  • 750
    g
    chicken livers
  • pinch ground ginger
  • garlic salt, salt and pepper to taste
  • GARNISH
  • 3
    hard-boiled eggs, peeled
  • chopped fresh parsley
  • sliced cucumber
 

Method

Heat the fat and fry the onion until translucent. Add liver and fry until cooked. Process in bowl of food processor until smooth. Add ginger and season to taste. Place on plate or in a bowl. GARNISH: Remove the yolks from the eggs and chop finely. Chop the whites separately. Decorate with chopped whites, yolks, parsley and cucumber. Serve with Kichel, a thin crispbread with a sugar coating. Serves: 6-8
