Ingredients

  • 6
    large tomatoes, diced small
  • 1
    large English cucumber, diced small
  • 1
    small onion, chopped finely
  • 1
    large red or yellow pepper, diced small
  • 30
    ml
    olive oil
  • 31
    ml
    wine vinegar
  • 250
    ml
    chicken stock (use a cube)
  • 251
    ml
    tomato juice
  • pinch sugar
  • salt and milled pepper
  • a few drops of Tabasco sauce to taste
 

Method

 
Mix all the ingredients together.
Halve the mixed ingredients into 2 bowls.
Purée or blend one of the bowls.
Mix both parts of soup together and chill.
Adjust seasoning, where necessary.
Serve with hot crusty bread and ripe avocado.
