Garlic pork with chickpeas

    pork fillet, diced
  • 3
    garlic cloves, crushed (or more to taste)
  • 15
    ml
    olive oil
  • 400
    g
    whole Italian tomatoes, chopped
  • 425
    g
    chickpeas, drained and rinsed
  • salt
  • milled pepper
  • 5
    ml
    sugar
  • 5
    ml
    Tabasco sauce
  • 150
    g
    spinach
  • 30
    ml
    flat-leafed parsley, chopped
 

Method

 
Place pork, garlic and oil in a bowl. Mix well. Heat a frying pan and place meat in it. Fry until browned all over and just cooked through. Remove from pan and set aside. Add tomatoes and chickpeas to pan, season with salt, pepper and sugar and add Tabasco sauce. Simmer for 15 minutes. Add spinach and parsley and cook until spinach wilts. Add pork and heat through. Serve with baby potatoes and vegetables, or with a salad and crusty bread.
