Ingredients (8)

oil — for frying
12.00 chicken breast fillets — deboned, diced
sea salt and freshly ground black pepper
15.00 garlic — cloves, crushed
150.00 g margarine — or butter
5.00 ml oregano
5.00 ml dried mixed herbs
190.00 ml vinegar — brown

Method:

Heat a little oil in a heavy-based saucepan. Season the diced chicken with salt and black pepper to taste. Fry small quantities of the diced chicken at a time until golden brown. Remove from the pan and set aside.
Pour off the remaining oil in the pan and melt the margarine. Add the garlic and stir-fry for a few minutes over medium heat without allowing the garlic to brown. Return the diced chicken to the pan and add the herbs. Season with extra salt and black pepper if necessary. Cover and simmer for a few minutes. Add the vinegar just before serving and heat again until the flavours are well blended.
Serve with rice, pasta and a salad.
Serves 4-6.
