Garlic chicken

    large chicken

    lemon, juice

    heads garlic

    sprigs fresh rosemary

    sprigs fresh thyme

    baby potatoes, scrubbed

    carrots, peeled and cut into chunks
  • French bread, to serve

1. Place chicken into a foil roasting pan. Pour lemon juice over it. 2. Peel outer layer of skin from garlic heads and slice heads in half. Place two of the heads into chicken cavity, with a sprig of each herb. Reserve remaining garlic. Pour half the oil over chicken, then cover with heavy aluminium foil. 3. Roast in preheated 180 ºC oven for one hour. Remove from oven and add reserved garlic, potatoes, carrots and remaining herbs. Cover with remaining oil and return to oven, uncovered for 30 to 45 minutes, until chicken is cooked through. 4. Mash roasted garlic cloves to form a paste and spread onto French bread.
