Oven temperature: 200°CHeat the oil and sauté the onion until soft. Add the green pepper and mushrooms and cook for a few minutes. Add the tomatoes and herbs and then the courgettes. Add a little water or vegetable stock if you need to. Cover and simmer for 20 minutes until the vegetables are tender.Stir in the beans and spoon the mixture into a greased ovenproof dish. Cut the garlic bread into thinner slices. Place the slices on top of the vegetables.
