Garlic and lemon linguine

If you've got the basics - pasta, garlic, lemons, Parmesan - all you need buy is some rocket and supper's nearly done.

    olive oil
  • 6
    garlic cloves, finely chopped and slightly crushed
  • 1/2
    sea salt flakes
  • 1/4
    fresh lemon juice
  • 70
    wild rocket
  • 1/3
    freshly grated Parmesan
  • sea salt flakes and freshly ground
  • black pepper
  • extra Parmesan
  • extra-virgin olive oil
Servings: Change Serving


Heat the olive oil in a small pot over medium heat, add the garlic and cook, stirring, for a few minutes, until the garlic is softened and fragrant but without colour. Set aside.

Cook the linguine according to packet instructions, drain and return to the pot.

Add the garlic oil, lemon juice, rocket and Parmesan. Toss well, season and serve into bowls. Finish with a drizzle of olive oil and sprinkle some more Parmesan over the top. Eat immediately.
